1 National dishes of Kyrgyzstan
2 The national cuisine of Kyrgyzstan is in many respects similar to the Kazakh cuisine. Recipes of many dishes are identical, and sometimes coincide by name. This is explained by the fact that during the period of the formation of their nationalities, the climatic conditions and methods of management were similar among the Kazakhs and Kirghiz.
3 Despite the neighborhood with the Uzbeks and Tajiks, the Kyrgyz meat is consumed, in the main, cooked, not fried. Especially appreciated in this kitchen horse meat. Although, along with the Chinese expansion, I came to the kitchen of Kyrgyzstan and lamb. It is made of: "Tuuragenen et" - Kyrgyz beshbarmak, "Pilaf" - local pilaf, "Lagman" - pieces of lamb with noodles and vegetables, "Baht" - lamb with rice and gravy, "Kulchetai" - boiled lamb with herbs, Kabyrga" - rolls from stew lamb, "Asip" - mutton sausages, "Goshan" - small chebureks, "Hoshan" - large dumplings, reminiscent of manti.
4 The local cuisine is rich in numerous broths and soups. It is worth to try: "Shorpo" - meat broth with potatoes, herbs and onions, "Kuurma-Shorpo" - a thick soup with meat and vegetables, "Tuurama-shorpo" - soup with meatballs, with the addition of legumes, "Jarma" - a mushy soup made of barley and ayran, "Kozhyo" is a soup made of millet and ayran, "Bozo" is a yeast mixture of fermented millet (similar to beer).
5 A special attitude in the kitchen of Kyrgyzstan to flour products. Here you will find dozens of types of such dishes.
6 The most common flour products: "Nan" (local bread baked in tandoor); "Komoch-nan" (bread, fried in a frying pan, on an open fire); "Kemyuch" (bread on coals); "Boorsok" (bread fried in oil); "Samsa" (pies with different fillings); "Sanza" (curly buns); "Gokay" (puff cakes); "Gammomo" (boiled dough cooked in a special way); "Tan-mosho" (pretzels fried in oil); "Kinkga" (figurines from deep-fried test).
7 Did not deprive the attention of the national cuisine of Kyrgyzstan and sweet tooth. Almost all the famous oriental sweets - sorbet, halva, baklava, pashmak, chak-chaka, cooked in a special Kyrgyz manner, are present on the table. In addition, it is worth trying: "Candolat" - sweet balls, "Sesame-kant" - products from sesame and sugar, "Kuima-kant" - a sweet mass of sugar and eggs, "Width-diamond" - baked apples in sugar with jelly.
8 And also, a lot of dried fruit in sugar.
9 The national drink in Kyrgyzstan is "kymyz" (koumiss). Make it from horse milk, taken in a strictly defined period. Kymyz has medicinal properties and perfectly quenches thirst. Also widely used "shalap" (ayran) - fermented cow milk, diluted with water, with the addition of sugar and salt, "ball" - a national drink based on water with honey, laurushka, pepper, ginger, cloves and cinnamon. In the southern part of Kyrgyzstan, green tea is often drunk, sometimes milk, sour cream, butter and salt are added to it. And in the north, they prefer black tea.
