Climate Weather and Climate Seasons in Australia are the opposite of those in Europe. Summer runs from November through to March while winter is from May to August. There are, however, huge variations throughout the country: New South Wales, the centre of Western Australia and Queensland have hot summers and mild winters but Victoria and Tasmania can experience chilly winters, combined with short days. The dry interior is hot year-round during the day but come nightfall it can become very cold. In the north, as the country enters the tropics, there are just two seasons - the dry from May to September and the wet from December to March.

History 17th CENTURY 1606The first European sightings of Australia were made by a Dutchman called Willem Janszoon on the Duyfken (Little Dove). Janszoon sailed into the Australian waters charting 300 km of the coast on the journey. Janszoon also met with the Aboriginal people on the journey. Janszoon was the first recorded European to achieve such feats. Later that year Louis Vaez de Torres sailed through the Torres Strait, named after himself. Both Captains have been recorded as having sighted the Cape York Peninsula. 1642Dutch explorer, Abel Tasmans, first journey to Australia. It was in 1644 that Abel Tasman established that Australia was made up of four coasts North, West, East and South. The Australian state of Tasmania was named after this famous explorer. 18th CENTURY 1770 Captain Cook lands in Botany Bay on the Eastern side of Australia in the ship named HM Bark Endeavour. and claims New South Wales for Britain.1788The First Fleet arrives at Sydney Cove under Captain Arthur Phillip to establish the first settlement in Australia. This was to be a penal colony - Sydney was founded. The date of his arrival, 26 January, went on to mark Australia Day. Food Australian cuisine has the most diverse range, quality, and inventiveness than many others in the world. However, it took Australia some time to evolve from the scenes of meat pies, Vegemite sandwiches, and sausage rolls to the scene of dishes such as "seared kangaroo fillet with wilted beetroot greens and roasted onions". The culinary art of Australia only luxuriated in the 1990s. But at that time, it was already considered the most adventurous in the world. Each capital city has seen a swarm of new restaurants within the genre 'Modern Australia cuisine, with inventive chefs at the helm and an audience of willing hedonists at the ready. This culinary reawakening is due to two factors: the wealth of superlative Australian produce, including native food, and the plethora of international cuisine brought to Australia by its immigrants from all over the world.
